Tasty Turkey Chili

1 TB Extra Virgin Olive Oil
1 small onion, chopped
2 TB minced garlic
1 large green bell pepper, chopped
1 large red bell pepper, chopped
1-2 hot peppers, seeded & chopped or 1 can chopped green chili peppers (optional)
1 bay leaf
1 1/2 lb ground lean turkey
2 15oz can red kidney beans
1 15oz can diced tomatoes
1 4oz can sliced black olives
16 oz frozen corn
1 15oz can tomato sauce
1 c chicken stock or water
2 TB chili powder
2 TB ground cumin
1 TB ground coriander
1-2 tsp cayenne pepper (optional)
Coarse sea salt to taste


1. Place extra virgin olive oil in a stock pot on med high heat. Add chopped onion and garlic and saute for 2-3 minutes or until onion is tender.
2. Add ground turkey and cook until meat is no longer pink.
3. Add chopped peppers and cook for 2-3 minutes
4. Add remaining ingredients and cook until mixture is simmering. Lower heat and let simmer for :30.


Slow Cooker version:
1. Place extra virgin olive oil, chopped onion and garlic in a sauce pan and cook until meat is no longer pink.
2. Place turkey mixture and remaining ingredients in a slow cooker and cook on low for 4-6 hours.
