Roasted Chicken, Potatoes & Vegetables

Ingredients:

Roasted chicken, potatoes and vegetables is quick and easy and 21 DAy Fix approved!
3 lbs Chicken drumsticks & thighs
3 c baby red skin potatoes
4 c assorted cut vegetables like grape tomatoes, brussel sprouts, onion, peppers, etc
fresh herbs: thyme, rosemary
salt, pepper and garlic powder to taste
3 tb extra virgin olive oil


  1. Preheat oven to 375 degrees
  2. Place potatoes and vegetables in a roasting pan with 1/2 c water and evoo. Add fresh herbs, and a little salt, pepper and garlic powder and toss to coat everything.
  3. Place chicken pieces, skin side up over vegetables and sprinkle them with salt, pepper and garlic powder.
  4. Place in the pre-heated oven for 1.5 to 2 hours or until skin of chicken is golden and crisp. Remove skin before eating.
