Ingredients:
3 lbs Chicken drumsticks & thighs3 c baby red skin potatoes
4 c assorted cut vegetables like grape tomatoes, brussel sprouts, onion, peppers, etc
fresh herbs: thyme, rosemary
salt, pepper and garlic powder to taste
3 tb extra virgin olive oil
- Preheat oven to 375 degrees
- Place potatoes and vegetables in a roasting pan with 1/2 c water and evoo. Add fresh herbs, and a little salt, pepper and garlic powder and toss to coat everything.
- Place chicken pieces, skin side up over vegetables and sprinkle them with salt, pepper and garlic powder.
- Place in the pre-heated oven for 1.5 to 2 hours or until skin of chicken is golden and crisp. Remove skin before eating.
