Ingredients:
2 Large Zucchini (sliced thin preferably with a mandolin slicer)
1 TB Extra Virgin Olive Oil
1/2 tsp Sea Salt
1/2 tsp garlic powder
1 tsp grated Parmesan cheese
Preparation:
- Preheat oven to 225 degrees
- Place zucchini slices on a double layer of paper towel and sprinkle with salt. Let sit for 5 minutes to draw out the moisture. Then pat dry with another paper towel.
- Line 2 large baking sheets with parchment paper
- Place zucchini slices on prepared baking sheets
- Lightly brush each slice with extra virgin olive oil then sprinkle with garlic powder and cheese
- Place in preheated oven and bake for 2-3 hours or until slices are golden brown and crispy
